18 AAC 31.215. Highly susceptible populations

In a food establishment that serves a highly susceptible population in a facility that provides health care, assisted living services, or custodial care, the operator shall ensure that the following foods are not served or offered for sale in a ready-to-eat form unless the foods are prepared in response to a specific adult consumer's request:

(1) raw animal foods, including raw fish, raw marinated fish, raw molluscan shellfish, and steak tartar;

(2) animal food that is not cooked to the minimum temperatures provided in 18 AAC 31.230, such as lightly-cooked fish, rare meat, soft-cooked eggs that are made from raw shell eggs, and meringue;

(3) raw seed sprouts;

(4) unpasteurized juices.
